As expected from a five-star establishment, Rox Restaurant, located inside the premises of Hyatt Regency Kathmandu, has always been intriguing to me on every visit. This fabulous restaurant is always buzzing, always full, and for a good reason. The restaurant features a show kitchen with wood-fired oven and has successfully brought the authentic Italian taste to Nepal. With both indoor and outdoor dining options, the restaurant serves as an ideal place to enjoy good food along with family and friends.

Every year, Rox Restaurant adds new dishes to their à la carte menu, showcasing the best of Western and Continental Italian cuisines, and this year was no different. I was delighted to be able to get a taste of the newest dishes. “We source the finest ingredients from around the world and use our own herbs grown in the hotel garden to cook authentic cuisines for our guests, delivering memorable dining experiences,” says Chef Dhiraj Khadka, Sous Chef at Rox Restaurant, who comes from a culinary journey spanning more than 16 years. Having worked in international hotels like Jumeirah al Naseem, Jumeirah at Etihad towers, The Ritz –Carlton and Regency Intercontinental, his expertise in the cuisine has been honed to perfection, and he looks forward to take the guests of Kathmandu on an Italian epicurean journey.

The restaurant’s culinary team has created sumptuous dishes, with highlights like Rox special salad, traditional tenderloin lasagna, Risotto alla Milanese, saffron, Marinara , Rox special pizza, oven-baked Tuscan style whole Himalayan rainbow trout, wood–fried chicken, spelt risotto, onion, rosemary jus, and Zabaione on the sweet side. For starters, I was presented with Salmone fatto in casa con salmone, salsa di zucchine al miele, which was basically a homemade cured salmon, and grilled Zucchini with honey dressing, Tagliatella fresca, con ricotta di pomodoro fresco e basilico made with fresh tagliatella, with eggplant fresh tomato ricotta and basil, and Insalata di pollo Caesar, lattuga iceberg, acciughe, crostini all'aglio which was a combination of chicken caesar salad, iceberg lettuce, anchovies, garlic croutons, and probably one of the best salads I ever had. All three of the dishes were eye-pleasing, light, and immensely flavorsome.

The menu is heavily inspired by Italian cuisine and uses fresh and high quality ingredients. Braciola di agnello Della Nuova Zelanda, patate arrostite (New Zealand lamb chop, roasted potato, lamb jus), and Filetto di buhari locale, ragù di lenticchie (Local buhari fillet, Puy lentil ragout) are the must try main courses for a change to your taste buds. The main courses were literally a glorious pile of delicious goodness, and for those with a sweet tooth, the desserts menu offers some lovely classics, as well as some interesting combinations. I tried the Zabaione, a mixture of sugar, egg, cream, and wine, served with seasonal cut fruits, that was delicately put together but not over the top. The acidic taste of wine matched perfectly with the sweet taste of the overall dish and the presentation was bright and appealing.

Even if you’ve never ventured to Italy and any Western countries, they will feel familiar, with Rox Restaurant’s menu lineup of greatest hits. What makes it a gem is the kitchen’s execution, homely ambience, and chefs’ presence in the dining room. Rox Restaurant at Hyatt Regency Kathmandu opens daily from 6pm till 10pm. And, so our love affair with the International cuisine continues.
